Patch sent the following questions to the restaurants participating in Walnut Creek Restaurant Week 2013 so we could learn more about the talented chefs and owners behind those kitchen doors. Today, meet Jim Telford, Owner of Residual Sugar, established in 2010.

If you could get a reservation at any East Bay restaurant with a moment's notice, which one would it be? I love Alice Waters, but I'm going to have to say The Dead Fish in Crockett. 

What is your favorite junk food? Nation's Chili Cheese fries

If you had to give up coffee or wine, which would it be? I'll give up wine when you pry it from my cold dead fingers. 

What would you eat for your last meal? Gordo Taqueria, Super Carnitas with extra hot sauce.

If you could have dinner with any famous person, who would you pick? Christopher Walken, with the meal prepared by Anthony Bourdain.

Name one thing that's always in your fridge? Beer or Cholula...a fridge should always have an ample supply of both. 

What's your favorite dish to make? Sushi - Unagi Rock-n-Roll, Maguro nigiri, with fresh fish, nori, & veggies purchased from Sunset Super in San Francisco. 

What food trend are you most tired of? Molecular Gastronomy...just weird.
